This is a pudding recipe that I copied out from my Mum's cookbook when I was kid. I make it for my own children sometimes and they love it. I was telling my Mum recently how much the kids loved it and I told them it was their Grandmothers recipe, and she said: Oh no, its not mine, my Grandmother used to make it for us when I was a child!
So here is:
Nana Moffitt's Caramel Dumpling Recipe.
Sift together 2.5 cups of flour, 2 pinches of salt, 2/3rds cup of sugar and 3 teasps of baking powder. Then rub in 2oz of butter. Add 2/3 cup of milk and 2 teasp vanilla essence. Should be a wet scone or stiff muffin mixture.
Drop spoonsful into the boiling pot of sauce, put lid on and simmer 20 mins.
Sauce.
Combine 2ozs butter, 3 cups brown sugar, 2 pinches salt and 3 cups water in a large saucepan. Bring to the boil stirring constantly until boiling then turn heat down once dumplings added.
Especially yummy with vanilla icecream.
